The Beauty of Cauliflower.

WHAT!!!  That's what you're thinking, right??  No, it's okay.  It's what I thought too.

Then I discovered just how wonderful this little veggie could be.  What you'll need:

Cauliflower
Olive Oil
Salt and Pepper
                                          Goat Cheese
                                          A Lemon

Cut up your cauliflower, toss it in about 2 tablespoons of olive oil, throw it on a baking sheet, and bake at 350 until it turns soft and a smidge brown around the edges.

In the meantime, in a small bowl mix together about 1/2 cup of goat cheese, the juice of one lemon, and the zest of half of that lemon.

Add your cooked cauliflower to that concoction, mix well, salt and pepper to taste, and serve.

You'll thank me - I promise.
